Preheat oven to 300 degrees.  Makes 25 one-inch meatballs.  I use food grade disposable gloves to mix the meat quickly and cleanly.

1 lb ground beef 85%

1 large egg

1/2 C bread crumbs

1/2 C crumbled tomato basil feta

1/4 C milk

1/4 C finely diced onion

1 T seasoning salt*

Mix all above ingredients.  Butter a large oven-safe frying/saute pan.  Make one inch (or smaller) meatballs and place in pan, leaving a small space between each meatball.  Cover with oven-safe lid or foil.  Bake for 30 minutes.  Remove cover, add 3 C of preferred marinara sauce to pan of meatballs.  Turn oven off and leave pan in oven to warm the sauce for another 15 or so minutes.  Serve warm with your favorite pasta.  Can also skip adding marinara and eat alone with a bit of parmesan cheese
