I use this as a salad dressing and as the marinade for a cucumber and tomato salad. Recipe makes approximately a 1/2 cup.


1 T sun-dried tomato paste

1/4 C olive oil

1/2 t white sugar

1 small clove garlic minced/pressed

3 T balsamic vinegar

Pinch of salt and a shake of pepper

Whip into an emulsion.  A tablespoon of fresh basil leaves, chopped, is a nice addition.  If the balsamic flavor is too strong, add another tablespoon of olive oil.
